The fruits and vegetables used are rich in phenolic acids and flavonoids, two large groups of natural antioxidants on which most of their functional properties are based. The antioxidant activity due to the presence of ascorbic acid, flavonoids (flavones, flavanones and flavonols) and phenolic acids (e.g. ferulic acid and p-coumaric acid) has the ability to counteract oxidation processes that prevent chronic diseases related to stress oxidative in the human body.
